This dish was a staple in my house growing up and now that I have a home of my own, it's my goal to make it a recurring dish. Sausage and peppers is one of those simple meals that takes very little effort, but provides ultimate comfort and satisfaction. Especially when eaten with a piece of crusty Italian bread (or two). The sweetness of the onions pairs perfectly with the salty spiciness of the sausage and peppers.
Ingredients:
5-6 Spicy Italian Sausages
1 1/2 - 2 Sweet onions
5 Poblano peppers
Salt to taste
1/4 - 1/2 cup water
Directions:
Cook sausage until browned on the outside. While the sausage is cooking, cut the onions into medium slices. Cut, seed and wash the peppers. Cut into medium strips. In the same pan that you cooked the sausage, cook the peppers and onions on medium heat until they reduce and start to caramelize. Add the sausage back in and add your water to make a sauce. Let it simmer about 5 minutes. Serve. (Makes about 4 servings)
